The Plank function is shifted left and right on a star's light spectrum output as a function of temperature. Our sun is at a temperature that puts the color green at the peak of the Plank function. Plants have evolved to work as efficiently as possible thus choosing green as the optimal color for energy absorption.
Other life bearing planets in the universe likely and predominately would have plants of the same color as the nearest star. Imagine a planet full of red or blue plants. The inhabitants likely also have eyes that evolved at a different light frequency ranges than our own.
